As in previous years, the all-you-can-eat (and drink) event, which will be held on Sunday, May 1 at 5 p.m., at Terra Gallery (511 Harrison St., S.F.), will feature a ton of culinary star power.
Here’s the lineup of the 2016 competing chefs, each of which will create six dishes from one whole hog, who will vying for the “Prince of Porc” title:
- Neil Stetz of Quince
- Ryan Pollnow of Aatxe
- Jason Franey of 1833 (and 2013 Cochon 555 Seattle winner)
- Nicolai Lipscomb of The Battery (2015 Heritage BBQ winner)
- Marc Zimmerman of Alexander’s Steakhouse
The winner will compete at the Grand Cochon held in Aspen in June.
As far as booze: Look for winemakers, including Ridge Wines’ Paul Draper, Sandhi Wines’ Rajat Parr, Scholium Project’s Abe Schoener, Pisoni Vineyards’ Jeff Pisoni and Pax Wine Cellars’ Pax Mahle, to also be on-hand. Participating bartenders include Andrew Meltzer of 15 Romolo, Brian Means of Dirty Habit, Simone D Mims of The Battery, Nicolas Torres of Lazy Bear and Derek Mottola of Aatxe.
There are also two other dinner events leading up to Sunday’s main event:
A late night Asian speakeasy pop-up on April 29, hosted by “2015 San Francisco Prince of Porc” David Bazirgan of Dirty Habit. Guest chefs will include Richie Nakano (formerly of Hapa Ramen) and Deepak Kaul (Serpentine).
On April 30, Wayfare Tavern chef Omri Aflalo will host a chef’s dinner featuring Bazirgan, along with Staffan Terje (Volta, Perbacco, Barbacco), John Madriaga (Spruce) and Kim Alter (Nightbird).
Proceeds for both dinners will benefit heritage pig charity, Piggy Bank.
